I’ve been sharing this recipe a lot lately for a Holiday recipe exchange going on at work… So I figured I would put it in here too… Because it’s one of my family favorites and it’s so easy to make!
Chicken Parm Sliders:
Ingredients needed:
Package of ground chicken (or turkey)
Fresh basil
Grated Parmesan
Salt & Pepper,
Minced Garlic/Garlic powder (optional)
Arugula or baby spinach
Fresh Mozzarella (cut in medallions)
Tomatoes (I like to use cherry tomatoes)
your choice of buns (Hawaiian roles, or mini ciabatta are my reco)
olive oil
How to make the sauce:
In a pan put a tsp of olive oil and throw in your cherry tomatoes (low fire), stir them around a little.
When they get a little soft, grab your potato masher and mash the tomatoes down to create your sauce. (You can use whatever you want to do this, but the potato masher works best a tip I picked up from Rachael Ray)
Put in a pinch of salt, and Basil to taste (I like a lot of basil)
That’s the sauce! (easy peasy done in 5 mins)
Preparing the meat:
In a mixing bowl, put in your ground chicken or turkey. Salt & Pepper to taste (even could add some garlic powder but not necessary), pour your grated parmesan in and mix it all together.
Then make your patties. Note: you can make them small for your sliders or you could make them bigger to make it more like a hamburger, recipe works either way.
In a pan fry up your patties until they are cooked.
Assembly of the slider:
Grab you bun of choice (toasted or not depending on preference)
Put a dab of the sauce you made on the bottom slice, then put your patty on top, place your mozarella medallion, your arugula/baby spinach, a dab more of sauce on your top slice of the bun. Put top on and ready to enjoy!
