Recipe: bacon avocado egg salad sandwich

This recipe will take about 15 mins of your time to make all in all. It’s healthy, delicious and quick to make, which is right up my alley!

Ingredients:

  • Eggs (hard boiled) – one per person
  • Avocado – whole avocado is enough for 4 people
  • Bacon – one per person
  • Romaine lettuce – one lead per Person
  • Salt & Pepper
  • Bread of your choice
  • Mayo (optional)
  • Mustard (optional)
  • Paprika (optional)

Step by step:

  1. Start by boiling water as you gather all the ingredients needed. Tip: need just enough water to cover your eggs, so not a ton, but in just enough that way it will boil faster. Also on a pan prepare your bacon, one slice per person, crispy as later you will turn them to bits.
  2. Add your eggs to the water when it boils, one egg per person you are making sandwich for is sufficient.
  3. As your eggs are cooking prep all your other ingredients: wash, dry and chop the lettuce into bite size pieces, cut the avocado in chunks and crumble the bacon, toast your bread if you like it toasted. By the time you get all this done your eggs will most likely be ready.
  4. Take eggs out of boiling water put in a bowl and run it under cold water. I keep them in a metal bowl with cold water to have them chill before I peel them.
  5. Peel your eggs, slice them in 1/2 and dump the centers into your mixing bowl. Once you have them all smash them up with a fork add a dash of salt and pepper to taste. Slice your whites into chunks and throw them into your bowl too.
  6. Add the avocado chunks, the bacon crumbles, the lettuce pieces all into bowl as well
  7. Add 1-2 Tbs of Mayo and a dash of mustard (these are optional if you don’t like mayo or mustard don’t add it, the avocado is creamy enough)
  8. Mix it all up, will look creamy. When mixing best is to do it with a fork, if you used the mayo make sure you don’t smash the avocado too much while mixing. If you didn’t use the mayo, make it a point to smash the avocado so it acts like creamy mayo
  9. Put mixture onto your choice of bread, sprinkle some paprika on it, will provide a dash of color and provide a hint of smokyness. If you don’t have any or don’t like it’s ok skip that part.
  10. Enjoy with a nice glass of your favorite beverage!

Variations:

  • If you don’t eat bacon for whatever reason – omit! The recipe without it is delicious too!
  • Mayo- it makes the mix creamier but you don’t have to use it because the avocado will make it creamy too.
  • Mustard – a dash is enough to provide good flavor, but if you don’t like mustard skip it, it’s good without it too!
  • If you don’t want to eat it with bread, it’s good also as salad with pita chips for example like if it were a dip.

    Hello, it is delicious! The last picture added is the Sandwich, I choose to put ot on a bagel this time bc that’s what I had available today. It’s good on Hawaiian rolls, sour dough, ciabatta… Or like I said as a dip with pita chips (Stacy’s pita chips especially). Enjoy!
